A masterclass in food and wine matching

After months of planning and an initial paper-judging round, the final cook-off for the 2010 UK Wines of Roussillon Dessert Trophy took place last Monday, at L’atelier des Chefs on Wigmore Street, London.

The competition challenges a sommelier and pastry chef team to create a dessert that perfectly complements a Roussillon Vin Doux Naturel. This year the base ingredient for the dessert was citrus fruit, providing outstanding flavour combinations when paired with a fruity AOC Muscat de Rivesaltes, Rivesaltes, Banyuls, or Maury from Roussillon. 

The competitors – teams from 1 Lombard Street, Summer Lodge Hotel, Green’s Restaurant and Oyster Bar and Galvin La Chapelle – began by preparing their desserts and wines in a staggered format. One by one each team presented their dessert creation and wine choice to the jury (comprising an extraordinarily talented, experienced panel with different areas of expertise across food and drink), including Tim Marson MW from Bibendum Wines, writer and broadcaster Sarah Jane Evans MW, Le Manoir aux Quat’ Saisons head pastry chef Benoit Blin, and Sara Jayne Stanes OBE, chief executive of the Academy of Culinary Arts and chairman of the Academy of Chocolate.

After much tasting and deliberation the jury agreed on a winner, placing sommelier Andrea Briccarello and pastry chef Daniel Fancett of Galvin La Chapelle in the number one spot, for their lemon bavarois with citrus fruit salad, accompanied by a 2009 Muscat de Rivesaltes, Domaine Pouderoux. The result was a spectacular explosion of sharp, citrusy flavours in the dessert matched with the sweet taste of the wine, described by Andrea Briccarello as “citrus on steroids”.  Simply beautiful. 

Benoit Blin announced the winners and presented them with their award at the drinks reception held immediately after the competition, with sommelier Matthew Mawtus and pastry chef Arnaud Viatte from 1 Lombard Street named as runners-up. 

The Galvin La Chapelle team will now begin preparations for their trip to Perpignan in January, where they will compete against teams from across the continent for the European Wines of Roussillon Dessert Trophy title. Best of luck to the UK team!

Judging starts on Wines of Roussillon Dessert Trophy 2010

Vins Du Roussillon logoWe had a mouth-watering afternoon yesterday, deliberating over 2010’s finalists for the Wines of Roussillon Dessert Trophy. The panel of knowledgeable judges included Benoit Blin – chief patissier from Le Manoir Aux Quat’Saisons, Sara Jayne Stanes – chief executive of The Academy of Culinary Arts, Tim Marson MW – buyer at Bibendum Wines and Costanzo Scala – head sommelier at Benares Restaurant.

We poured over the entries and, salivating over the gorgeous descriptions of desserts and wine pairings, attempted to place them in order of merit.   Entries came from pairs of pastry chefs and sommeliers from some of the UK’s best restaurants so we weren’t short on quality,

The competition requires entrants to put together a pairing of a Roussillon Vin Doux Naturel with a dessert creation and this year a culinary theme of citrus fruit added an additional layer of challenge to the process. No wonder the paper round, without the desserts to taste or the wines to sample, requires such skill to judge! Luckily, with the panel’s expertise, we finally managed to come up with this year’s short list:

1 Lombard Street for their Citrus Lombardo paired with Maury Blanc from Domaine les Terres de Fagayra

Galvin La Chapelle for their lemon bavarois with citrus fruit salad paired with 2008 Muscat de Rivesaltes, Domaine Pouderoux 

Greens Restaurant and Oyster Bar for their white grapefruit mousse with an Amedi dark chocolate and chilli spring roll, grapefruit and orange juice caviar paired with Rivesaltes Ambre 1998 Domaine Fontanel, Vin Doux Naturel

Summer Lodge Hotel for their Orange and Mandarin Crepe Soufflé “Suzette” paired with Muscat de Rivesaltes, Chateau de Jau, 2007

The final will take place at L’Atelier des Chefs on Monday 25 October where the four finalists will come up against the panel once more in what can only be described as the ultimate cook-off.

Wines of Roussillon Dessert Trophy competition launches for 2010

2009 winning wine and dessertEntries are now open for the fourth UK Wines of Roussillon Dessert Trophy, a quest to find the best pastry chef and sommelier pairing in the country.  Citrus fruit will be the new taste challenge for this year’s prestigious competition as teams from across the UK are challenged to find the perfect pairing of a Roussillon Vin Doux Naturel (VDN) with their own citrus dessert creation.

Sommeliers entering the 2010 competition are invited to select a Roussillon VDN from their own wine list – from Banyuls, Banyuls Grand Cru, Maury, Muscat de Rivesaltes or Rivesaltes – to match with their pastry chef’s citrus dessert.  Citrus fruit is an ingredient which offers endless possibilities for innovative dessert recipes and daring wine and food combinations. These pairings can be further enhanced by adding fresh and dried fruits or other ingredients such as herbs and spices to the dessert. The rich, fruity and complex VDNs from the Roussillon provide exciting flavour and texture combinations when paired with citrus fruit, complementing its strength and concentration of flavour and providing harmonious balances.
